Molten Chocolate Cakes with Berries

Have a go at this

Ingredients

• For the Chocolate Cakes
• 230g unsalted softened butter, plus extra for buttering molds
• 230g dark chocolate, chopped
• 1/2 tsp instant espresso powder
• 4 large eggs
• 4 large egg yolks
• 150g granulated sugar
• 4 tsp plain flour, plus more for dusting molds
• 3 tbsp Frangelico or hazelnut liqueur
• 150g fresh raspberries
• 150g fresh strawberries
• Fresh mint, for garnish

1) Butter and lightly flour six (170 g) ramekins. Tap out any excess flour.

2) In a small saucepan, bring to a boil 4cm of water. In a large glass bowl, add butter, chocolate and espresso powder. Lower heat and place bowl over the simmering water. Slowly whisk mixture until the chocolate is almost completely melted. Remove bowl from heat and continue to whisk until all chocolate has melted. Allow to cool slightly.

3) In a large bowl, add eggs, yolks, and sugar. Using an electric mixer, beat until light and fluffy and pale in color. Reduce speed to medium-low and slowly pour in the chocolate mixture. Add the flour and mix until just combined. Do not overwork the batter.

4) Preheat oven to 230°C.



5) Divide the batter between the molds. Line a baking sheet with parchment paper. Place chocolate molds onto baking sheet and place in oven for 7 minutes. If not baking immediately, cover chocolate molds with plastic wrap and refrigerate until ready to serve, up to 8 hours. When ready to bake, place refrigerated chocolate molds onto baking sheet and place in oven for 10 minutes. The top and sides should be cooked and dry and the inside will be runny.

6) Using oven mitts, carefully invert each mold onto a plate and let it sit for 10 seconds. Then lift 1 corner of the ramekin and the cake should slip out. Sprinkle about 1/2 teaspoon Frangelico over each cake. Spoon berries around the chocolate cake and garnish with mint. Serve warm.

Traditional Handknitted White Flowers Baby Blanket

Handknit in beautiful soft baby white wool/ yarn

This has been hand knitted with love and made up with care.
It has double sided satin ribbon looped into the border to add extra detail.

This blanket is one of my most favourite patterns.

Un-stretched the blanket measures 28 Inches 72cm x 22 inches 56cm- pram/ cot/ Car seat cover, topper blanket (pretty topper)

Care requirements: Hand-wash and lay flat to dry so it doesn't loose its shape.

The story of this blanket:

I knit this very pattern for a friends baby, she used it for the Christening day and got so many lovely comments. I enjoyed making it so much i decided to make one for sale in my Etsy shop.

Overall the blanket took me over 2 months to knit and make up, it was a real labour of love designed to be a useable keepsake that can be kept and handed down by generation to generation.

Dispatch - the only day i don't post is a Saturday as my local post office is closed. I aim to dispatch orders as quickly as possible usually within 24-48 hours of purchase unless this is a custom order which we can discuss at the point of ordering.

Delivery: have piece of mind whether your order is in the UK or overseas the postage for this item comes with tracking details and insurance.

Carrot Cake with Cream Cheese Frosting

Ingredients

• For the cake

• Cooking spray
• 2 cups pecan halves
• 2 1/2 cups plain flour
• 1 tablespoon plus 1 teaspoon baking powder
• 1 1/2 teaspoons cinnamon
• 1/2 teaspoon freshly grated nutmeg
• Salt
• 4 large eggs
• 2 cups granulated sugar
• 1 cup vegetable oil
• 3 cups finely grated carrots (about 1 pound carrots)
• 2 teaspoons pure vanilla extract
• For the frosting
• 1 pound cream cheese, cut into cubes, at room temperature
• 2 sticks unsalted butter, cut into cubes, at room temperature
• 2 1/2 cups icing sugar
• 1 teaspoon pure vanilla extract
• Salt
• 1/4 cup double cream, cold

Method

1. For the cake: Preheat the oven to 175°C. Line two 9-inch round cake pans with parchment and lightly coat with cooking spray.

2. Spread the pecans on a rimmed baking sheet and toast until light brown and fragrant, 7 minutes. Set aside 12 pecan halves to decorate the finished cake; chop the remaining pecans. Set aside 1 cup of the chopped pecans to use in the batter; reserve the rest for decorating the finished cake.

3. Whisk together the flour, baking powder, cinnamon, nutmeg and 1 teaspoon salt in a medium bowl.

4. Whisk together the eggs and granulated sugar in a large bowl until smooth, about 1 minute. Whisk in the oil until well combined. Add the grated carrots, vanilla and 1 cup chopped pecans, and mix well. Add the dry ingredients, and stir until just combined. Divide the batter evenly between the prepared pans.

5. Bake until a toothpick inserted in the center comes out clean and the cakes are nicely browned, about 30 minutes. Let cool on a cooling rack for 10 minutes. Loosen the edges with a spatula, turn the cakes out and let cool completely, right-side up, on the cooling rack, about 2 hours. Remove the parchment before frosting.

6. For the frosting: Beat the cream cheese and butter in the bowl of a stand mixer fitted with a paddle attachment, scraping down the side as necessary, until smooth, about 2 minutes. Add the icing sugar, vanilla and 1/2 teaspoon salt; gradually increase the mixer speed to medium-high, and beat until the sugar is incorporated and the frosting is fluffy and smooth, about 3 minutes. With the mixer on medium-high, add the cream a few drops at time until it's all incorporated. Continue beating for 1 more minute until the frosting is slightly lighter in color and creamy.

7. To assemble: Place one of the cake layers on a serving plate, and spread 1 cup of the frosting over the top. Top with the other layer, and use the remaining frosting to frost the top and sides of the cake. Arrange the 12 whole pecans on top of the cake like the numbers on a clock face, and sprinkle the remaining chopped pecans in between.

Rainbow Ice Cream Cake Recipe

Ingredients

• 485g plain flour
• 250g unsalted butter
• 2 tsp baking powder
• 450g caster sugar
• 7 egg whites + 1 whole egg
• 3 tsp vanilla extract
• 370ml buttermilk
• Assorted rainbow gel food colours
• For the ice cream filling
• 200g condensed milk
• 500ml double cream
• 1 tbsp vanilla extract
• For the buttercream
• 200g butter
• 400g icing sugar
• 1 tsp vanilla pod paste
• Sprinkles to decorate

Method

1. To make the ice cream layer, whisk together the condensed milk, double cream and vanilla until thick. Pour in to a cling film-lined cake tin the same size as the ones you’re going to bake the cakes in.

2. Grease and line two 10-inch cake tins.

3. Cream together the butter and sugar until pale and fluffy, slowly add in the egg whites and yolk and continue to beat until creamy. Add the vanilla. It might look a little split at this stage but keep going.

4. Sift together all the dry ingredients. Starting and ending with the dry ingredients, alternate adding dry ingredients and buttermilk to the mixture.

5. Using an ice cream scoop, divide the batter in to 5 bowls and colour each with the gel food colouring. Pale pastels or bright and vibrant - it's up to you.

6. Once your colours are combined, use an ice cream scoop to divide each colour in to the tins in concentric circles, so one colour on top of the other. I went in this order: green, purple, yellow, pink and blue.

7. Bake in a preheated oven at 180°C for 25-35 minutes depending on your oven, or until a skewer poked into the middle comes out clean. Remove from the oven and cool completely before wrapping in cling film and freezing.

8. To make the buttercream, place the softened butter in a stand mixer and beat until pale. Slowly add the icing sugar and vanilla and continue to beat for around 5 minutes until really light.

9. If you need to trim the tops of your cakes, do that now.

10. To assemble the cake, take a cake board, take your first sponge and top it with the ice cream layer you froze earlier, removing all the cling film. Top with the second layer of sponge. 

11. Ice the whole cake with buttercream, filling in any gaps as you go. Decorate the edges with sprinkles. Freeze. Remove from the freezer 20 mins before you want to serve.
