Don't you just love tulips


WHITE CHOCOLATE TRUFFLES


INGREDIENTS

  • 200 g white chocolate
  • 5 tsp strong lapsang souchong or green tea
  • 3 tsp clear runny honey
to coat
  • pistachio nuts, blitzed in a food processor
  • cocoa powder
  • icing sugar, dyed pink with food colouring

METHOD

1. Patiently melt the chocolate in a bowl over a saucepan of slow simmering water. If you try and do this too fast, you will cause havoc with the chocolate. 

2. Once melted, mix in the tea 1 teaspoonful at a time, taking care not to waltz the chocolate around the bowl more than a few short times. The chocolate will hate this, seize up and crystallise, which is exactly what we are hoping for. 

3. At the 'tantrum' stage, mix in the honey with a spatula until the chocolate is cheerful again- it will gloss and smooth up almost instantly. Place the soothed chocolate in the fridge for 20 minutes until just set. 

4. To coat: scoop up the mixture into teaspoon sized balls and roll in the coatings. Set aside on a plate or in a jar to serve, and keep in the fridge until you want them. 



Monday is drawing in

I really don't want to face work tomorrow! Today hasn't actually gone to plan.... my iCloud wasn't syncing my photos properly which is annoying since i spent 1.5 hours taking pics for my shop this morning.

All sorted now but I'm about 5 hours behind...getting that sorted and one major update to do....arrgghhh things are never straight forward.


MALAY NOODLES, SOY, BEANSPROUTS AND SUGAR SNAPS




  • Serves: 6
  • Cook Time: 10 minutes 
  • Prep Time: 5 minutes 
  • Effort: easy

  • INGREDIENTS

    Ingredients
    • 2 cloves of garlic, peeled and roughly chopped
    • 50g fresh ginger, peeled and roughly chopped
    • 50g coriander root, roughly chopped
    • 1 tsp of salt
    • 50ml vegetable oil
    • 1 kg oiled fresh noodles (can be bought from Chinese or Thai supermarkets)
    • 300g sugar snap peas 
    • 100ml soy sauce
    • 100ml kecap manis (sweet soy sauce)
    • 1 tbsp Thai fish sauce 
    • 300g beansprouts
    To serve
    • 2 red chillies, sliced on the bias
    • 2 spring onions, sliced on the bias

    METHOD

    Method

    1. In a large pestle and mortar, pound the garlic, ginger and coriander root to a paste and add the salt and pound again mixing well.

    2. Heat the oil in a large wok until shimmering, then add the ginger paste and stir for 1 minute or until the fragrance is released.

    3. Add the noodles and continue to fry for a further 2 minutes mixing well into the paste. 

    4. Add the sugar snap peas and toss well and cook for another 2 minutes.

    5. Pour in the soy sauce, kecap manis and fish sauce and mix well coating the noodles. Cooking for a couple of minutes.

    6. Add the beansprouts and mix again. Add half the chillies and spring onions and stir well. To serve

    7. Place the cooked noodles in a large serving bowl and garnish with the remaining sliced chillies and spring onions.

    Mmmmmm Cheese scones.....give these a go this weekend


    INGREDIENTS

    • 200 g self-raising flour, plus extra for dusting
    • 1/4 tsp salt
    • 1/2 tsp mustard powder
    • 1/2 tsp cayenne pepper
    • 40 g butter
    • 60 g strong cheddar cheese, grated, plus extra for garnish
    • splash milk
    For the chive cream cheese
    • 1 bunch chives, finely chopped
    • 200 g cream cheese, softened
    For the tomato jam
    • 50 ml olive oil
    • 1 large onion, peeled and finely chopped
    • 5 tsp finely grated garlic
    • 3 tsp finely grated fresh root ginger
    • 6 fresh chillies, roasted, skinned and chopped
    • 3 tsp yellow mustard seeds
    • 1 kg canned chopped tomatoes, or fresh skinned tomatoes
    • 250 g caster sugar
    • 250 ml white wine vinegar

    TIPS AND SUGGESTIONS

    You can make the tomato jam in batches and either freeze it or 
    keep in sterilised jars in the fridge for up to 1 month. 

    Sour milk is better than fresh for scones. It gives flavour and the
     extra acid also makes the raising agent work more effectively. You 
    can buy this in most supermarkets, or sour it yourself with a squeeze 
    of lemon juice but dont just use your usual milk, which has gone off! 

    Brush the top of your scones with milk before you pop them in the 
    oven. This will make them golden and glossy on top. 

    METHOD

    1. For the chive cream cheese: mix the chives into the cream cheese until thoroughly combined. Season to taste with salt and freshly ground black pepper, then refrigerate until ready to serve. 

    2. For the tomato jam: heat the oil in a heavy-based saucepan and fry the onion for 5 minutes to soften, then add the garlic and ginger and cook for a further 5 minutes. 

    3. Stir in the chopped chilli (both seeds and flesh), the mustard seeds and tomatoes, and allow to cook for 20 minutes until most of the liquid has evaporated. 

    4. Put the sugar in a bowl with the vinegar and stir until dissolved, then stir this solution into the tomato mixture. Bring back to the boil, season with salt and freshly ground black pepper, then remove from the heat and allow to cool. Pour into airtight jars and store in the fridge. 

    5. Preheat the oven to 220C/200C fan/gas 7 and lightly grease a baking tray. 

    6. Sift the flour, salt, mustard powder and cayenne pepper into a mixing bowl. 

    7. Cut the butter into small pieces, add it to the flour and mix it in, using 2 knives, until incorporated. Add the cheese and milk gradually, stirring well with a knife until the mixture begins to stick together. 

    8. Turn the dough out onto a floured surface and roll it out to about 3cm thick. Using a 5-6cm cutter, cut out individual scones, re-rolling and cutting the scraps until all the dough is used. 

    9. Arrange the scones close together on the prepared baking tray, sprinkle some extra cheese on top and bake for about 10-15 minutes until golden. Cool slightly before serving. 

    10. Serve with the scones with the chive cream cheese and tomato jam.

    I sell my finished hearts for £6.99 online buy depending on where you are selling you could charge more... if it is a Craft Fair make sure you charge a little more to cover your table costs (at Craft fairs i would charge £7.49 - £7.99

    so let's work out the profit margin on them


    a large heart costs 89p work out what you would like to do with it

    Twine, paint to white wash the mdf, stamp for sentiment or pen for a drawn on sentiment and embellishments = £1.00 materials
    Thats a cost of £1.89

    thats a £5.10 profit
    Make up time is usually 15 mins not including paint drying time... not bad ehh?

    Things have been manic here at hlc it just seems to be one of those weeks where everything has to be done right now!

    I have so many projects on the go at the minute i have set myself a challenge to get them all completed by the end of march which is no easy feat ....




    one of my latest makes was a crochet necklace i made, i bought some beautiful blue craft cotton bought from John lewis i wanted to make a necklace...

    I started out my creating a crochet bib and then crochet 3 flowers - 2 medium and 1 large. I hand sewed some stunning Swarovski beads into the flower centres and attached them to the necklace

    I used my ribbon ends findings and sewed some extra beaded detail her the ends.

    I added some chain and made some beaded droplets just to add some detail to the chain and clasp end

    Graphic 45 Memory Album.
    Each page offers something special with photo matts and wallets and lots of pull out pages. This has combined my love of paper crafting, paper construction, scrapbooking, wire work, mixed media and
    Album Size 8x8 - quite deep with a bronze hoop clasp on an extender chain so you can fill it right up
    The spine has a special binder chain with lots of little charms and quirky findings.
    The flowers that adorn the front of the album are handmade.
    This album is made mainly from the Graphic 45 ABC Primer Deluxe Collector's Edition
    A perfect album to capture family photos from a time when they are young and at school. This would make a great album to make and then give to a Mum or Gran of their little ones years at school.
